WHEN MY HUSBAND SCOTT AND I PURCHASED POKEY O’S ELLIS COUNTY IN SUMMER OF 2019, WE NEVER DREAMED HOW MUCH JOY IT WOULD BRING TO US AND EVERYONE AROUND US!
Thankfully, the previous owners had already created a fabulous reputation for Pokey O’s in our community, but my husband leaving his teaching career to manage Pokey O’s full-time was a huge leap of faith.
We firmly believe God opened the door for us to run with this business, and it happened at the perfect time in our lives. In July, we’ll celebrate our one year business anniversary.

Pokey O’s is a franchise out of Dallas, Texas, that opened in 2006. Pokey O’s Ellis County is one of six Pokey O’s food trucks in Texas. Our speciality is combining soft, fresh, homemade cookies with Blue Bell ice cream, a Texas favorite! We place a heaping scoop of ice cream between two cookies and give you our biggest seller and the best ice cream sandwich you will ever savor, a Pokey O!

Pokey O’s Ellis County is best known for catering events (can you believe we have served 1,000 people in 30 minutes). We have also been known to park-and-sell around town at various businesses and community parks. THE BEST POKEY O
A recipe for the BEST ice cream cookie sandwich.
1. Take two soft, fresh, warm (if you can make it happen) homemade cookies.
2. Take one large scoop of your favorite ice cream (we prefer Blue Bell, of course!) and place the scoop on one of the cookies.
3. Place the other cookie on top and add just a tiny bit of pressure to “sandwich” the ice cream really well in between the cookies.
4. Enjoy!
