The Details
The ECLM team worked with Angel Schiffer of Bittersweet Bakery in Waxahachie to identify some new wedding cake trends to inspire our brides. Frist, we went for color with the deep sea blue. Second, Schiffer added texture with fresh fruits like blackberries, pomegranate seeds and figs and then fresh orchids.
You & Your Baker
Schiffer recommends that you start working with your baker a year before your wedding. After choosing your baker, sign that contract! Schiffer recommends that you let your baker know about the other food being served, the number of guests you actually expect to attend (be realistic!) so they can help you create a cake that fits with your needs and your budget. Lastly, make sure you have the ability to make changes to your cake in the contract! Give yourself permission to change your mind and build a strong relationship with your baker.
