After two years of hard work and planning, Jay and AmberDiSimone – owners of 840 Farm – have brought something
truly unique to Waxahachie and Ellis County, Texas: The
Blind Pig Butcher, a traditional butcher shop with the
feel of a charming European small village market—and a
mission rooted in local, sustainable food. Formerly The
Catfish Plantation, they have transformed the building on
Water Street into something very special.


Step inside and you’ll immediately sense the difference.
This isn’t your average meat counter. At The Blind
Pig Butcher, meats are sustainability raised and locally
sourced, resulting in higher quality cuts that are both
flavorful and responsibly produced. Whether you’re
planning a weeknight dinner or a weekend gathering, they
are happy to offer expert advice on which cuts will work
best—and even share recipes to try at home.
The Blind Pig offers more than just exceptional meat. The
shop also features fresh eggs, handmade pastas, breads,
soups, salads, tamales, and a variety of spices—all sourced
from local farmers, bakers, and artisans. It’s a one-stop
shop for anyone who values quality ingredients and
supporting the local economy. The growing list of vendors
includes Keli Lynn’s Hens, The Waxahachie Bread Lady,
Happy Greens Cafe, Meat Church, Sandcastle Seasonings,
Katie’s Cakes & Desserts, and Becerra’s Tamales.

Jay and Amber’s vision was to create a place where old-
world butchery meets modern values—community,
sustainability, and transparency. They’ve succeeded in
building not just a store, but a gathering place where food
lovers can connect over a shared appreciation for great
ingredients and time-honored craftsmanship. On the
outside deck, bistro tables and chairs invite customers to
gather under the warm glow of string lights. Charcuterie
boards and wine are coming soon!
