Tucked away in the rolling countryside of Ellis County Texas, Hidden Honey Farm has been a local gem since
2011-a place where hard work, family, and a love for the land come together to grow something special. What
began with a few rows of vegetables and a handful of laying hens has blossomed into a thriving organic farm
known for its warmth, honesty, and community spirit.
It all started with a simple “road box” at the end of the driveway-a wooden stand stocked with fresh eggs, honey,
apple butter, and homemade jams, all sold on the honor system. Neighbors came for the quality, but they stayed
for the connection. Over time, the farm expanded to include greenhouse-grown vegetable plants in the spring
and pick-your-own strawberry fields that delighted families from 2014 to beekeeping, which began in 2012 after
a neighbor’s casual comment that “you really need bees,” quickly became a beloved part of the farm’s identity- and so did the jars of golden honey that now bear the Hidden Honey name.
Owners Tim and Dixie have poured their hearts into every inch of the farm. After Tim retired from construction last year, he and Dixie-the farm’s master gardener, who lovingly tends to every seedling, plant, and flower-
found new energy to bring long-held dreams to life. With Tim’s daughter, son-in-law, and grandson now living and working on the property, the family hosted their first fall festival in 2025-a joyful success that inspired them
to keep the spirit growing.

Fresh Cut Trees This winter, Hidden Honey Farm is thrilled to announce another new chapter: their very
first year offering fresh-cut, premium Christmas trees. Visitors can choose the perfect tree, sip hot cocoa by the
fire, and shop for handcrafted holiday treats-creating memories that last long after the ornaments are packed
